Bacolod: Sipalay • Date + Movie • Vietnamese Balut (Part 2)



Lois and Clarissa had pre-planned a beach day with their cousin Inah before I even planned on going so it was soo convenient that I arrived and stayed long enough to come with them to the beach! So yay! Beaches are always fun.










It was super amazing just swimming around and feeling the summer breeze on the boat!! I love the sea so much! My family used to go on beach trips every Monday at one point and I never got tired of it!

The next day, I had a nice little lunch date with Eunice and we watched Para sa Hopless Romantic. I didn't really like the movie so much, given that some Filipino movies are paving their way into my heart, this one just stood there. And it's such a shame cause I really liked the concept of having two stories in one. It just didn't flow properly and the ending was pretty crappy.

The following day, Clarissa got married!!!!!



It was soo beautiful, simple, and heartfelt. I loved it so much!!!! I'm so so happy for her, Richard is such a great guy, he is a golden boy. Haha. But yeah!!! I really am so incredibly blessed to have witnessed this couple's growth and love for each other and for the Lord.








That night, we went to the mid-week service at their church and then had dinner at a Vietnamese restaurant to try out their balut! It was amazing!!!!

Bon Chon


Everyone's been raving about this new chicken joint called Bon Chon, and now I know why.

After visiting my grandparents in Pasig, we trudged off to Galleria to try the infamous Bon Chon.
 HOLY MOTHER OF CHICKEN AND ALL THAT IS GOOD. It is like the chicken from heaven. Look out Kernel, the koreans are taking over not just the Philippines, but the fast food chicken industry too. 

First of all, the chicken and all its glorious Soy Garlic sauce is probably made of dreams and sparkles and garlic. Oh, and rainbows too. That sauce is perfection. I don't know how they did it, but... Its not too salty, not too sweet. Its perfect I tell you. 

And pair that wonderful sauce up with an immaculately crunchy exterior and you've hit the gold mine. Its unbelievable how crunchy this chicken is. You can legitimately hear people biting into the chicken. Not like that fake commercial of the Chowking Chicken. No. This is the real deal. And then after you get passed the crunch, flavors just explode in your mouth with a side of juicy, mind blowing chicken.

I literally think of biting into it at night, in bed. No Joke.


And their other dishes are good too. Can you believe they had Kimchi Coleslaw!? Me neither. But they do. And its amazeballs. This fish taco is pretty good too. 


We also ordered Chapchae. Its a really good Korean noodle dish with veggies. I've tried the real deal Chapchae in a legit Korean restaurant and this fast food version did not fail. You'd think they'd serve you some crappy version. Nope. I was really surprised. 

On another note, the prices are really good.


You guys, I think this might be it... Ok. I'm going to say this. I never thought I'd say it. but..

This is the best chicken ever.

There. I've said it.

I just hope that in the future, when they're super big, they won't loose the flavors in the process. KFC used to be really great, but mass production and their big name destroyed the flavors and it wasn't the same as before. Seriously Bon Chon, please, do not go down that slope.

My only bad review is that one order won't do the deed. You'd want more and you'd regret not buying another plate cause you'd be thinking of this chicken before you sleep. 

Bon to the chon my people. Bon to the Chon. I've got Bon Chon Blues. Bon Bon Bon. Chon.


I also met with Iya that day!! Just for a few mins but I missed her so much, ITS SUPER NICE TO SEE HER <3<3 (p.s. sorry for the sucky photo, this was the only photo I took of her and it was an accidental shot too. Haha.)

My dad thought Banana Leaf was super amaze that he took his staff to eat there! I tagged along. Haha.

This is the best Milk Tea i've tasted. The tea was so strong, and a bit bitter, almost like coffee. Which is why I loved it! (oh ayan na may gusto na akong tea!! happy girls? haha! my friends have been forcing me to drink tea for a long time now.)





I forgot to mention that you actually have to eat on a Banana Leaf  literally. Ain't that super? :>

We got a bit lost, good thing I was registered to Globe PowerSurf. And we used Maps for the first time!!

It was super cool, that blue dot represents the phone, and it actually follows you! Its amazing what technology can do nowadays. Its just expensive is all. Haha!

That afternoon, I walked on my way home from SM and I saw my crush's friends. He wasn't there though. I was so bummed! :(

Pancake Heads



Lois and I met up with the wonderful Ina & Elle at Atc for the 2nd time! *Happy Dance* And kawinkadinkaly, Jenny was there and I got to meet her for the first time! Lois has been telling me how nice she is and how she makes people feel like they've been friends forever, and Ohhh she's super nice and I love how she includes everyone in the conversation. She's even better than what Lois explained! Soo nice to meet her :)

Bowling


I met up with my friend Dannah and her Boyfriend at the mall of asia. This was the first time I've met him, and I think bowling is a great way to bond with someone you've just met. Well, that's what we did. Haha. He's only here for a couple of months so we've been going out a lot with him. He treated us to a Japanese Restaurant and then we just walked around and Bowled. I was pretty awesome.

My dad was planning one of his trips to Hong Kong for his technology shopping, and it happened to collide with my brithday. So he let me tag along with him! *happy dance* Hong Kong is (as of now) my favourite country in the entire world. I literally want to live there. I love the people, the energy, the transportation, the system, and the life. Well, I am a city girl.

Wander Away: Bicol Day 2!


On our second day in Bicol, we went to a conference in Tabaco and then visited the Mayon volcano and went to the rest house there, and it had a planetarium there too. Sucks that it wasn't open! I was so ready to go see stars and stuff. But no. The universe didn't intend it to be so.

At night we went to embarcador mall again to have our last dinner in Bicol. I love, love, love that mall. Srs.

Heart Shaped Chocolate Ice Cream Sandwiches: How To

I've always loved Ice Cream sandwiches but I can never find a good place to buy it from other than Dairy Queen. Plus, I was in need of a good recipe for my next article. So I'm like, what the heck! I'm going to make Ice Cream Sandwiches.


This recipe is going take a bit of patience because you constantly have to keep the dough chilled for you to be able to cut it. So a little tip: While the first batch is baking, cut out the next batch and then place them on parchment paper or foil with a little bit of flour and put them back into the chiller. When the first batch is finished baking, place the precut ones you’ve chilled beforehand onto the baking sheet and repeat the process. Bakenjoy!



Ice Cream Sandwiches 
(adapted from Martha Stewart's Chocolate Strawberry Ice cream Sandwich Recipe)

Depending on how thick or thin you roll the dough out, the amount may vary.



·  2 3/4 cups all-purpose flour, plus more for dusting
·  1/2 cup cocoa powder
·  2 1/2 teaspoons baking powder
·  1/4 teaspoon salt
·  12 tablespoons (1 1/2 sticks) unsalted butter, room temperature
·  1 1/2 teaspoons Vanilla Extract
·  1 1/2 cups sugar
·  2 large eggs
·  1 tablespoon milk
· Optional: Sprinkles, Chocolate Chips, m&m, etc.
·  Ice Cream


  In a medium bowl, sift together flour, cocoa powder, baking powder, and salt, and set aside.





 In the bowl of an electric mixer fitted with the paddle attachment, or with just a spatula or spoon, cream butter, vanilla, and sugar. Add eggs and milk, and mix until combined.




Add reserved flour mixture, and mix on low speed until incorporated, scraping the sides of the bowl at least once. Divide the dough in half, and shape each half into a flat disk. Wrap each disk in plastic wrap, and chill until firm, about 1 hour. 



  Preheat the oven to 350 degrees. Roll dough out on a floured surface, sliding an offset spatula under the dough to release it every few turns of the rolling pin. Roll dough to 1/8 inch thick. Cut dough using a variety of heart-shape cookie cutters 2 1/2 to 3 inches in diameter, making sure each cookie has a match to make a sandwich. Place hearts on a parchment-lined baking sheet; chill until firm, about 30 minutes. Remove from refrigerator; use a fork to prick the cookies all over with holes. Bake until just firm, 7-12 minutes. Let cool on baking sheet; transfer to a wire rack. 




  With the underside of half the cookies face up, place cookie cutter on the cookie, and spoon softened  ice cream into the cookie cutter about 1/2 inch thick to cover one side. Smoothen the top and spread to sides until the ice cream takes the shape of the heart, and with your spoon on the smooth surface, pull the cookie cutter off. Place matching cookie on top of ice cream, top side facing out. Optional: Add the sprinkles. Transfer immediately to freezer to harden; repeat with remaining cookies and ice cream. Serve directly from the freezer. Sandwiches can be kept stored in an airtight container in the freezer for 3 to 4 days.





And there you have it! Instant bliss~ aahh




They were quite delicious. Let them chill overnight for best results, so the cookie can soften and set onto the Ice Cream. So its best to do this a day before serving. But I just know you're biting into it the moment you've placed the top cookie on! Well, that's what I did!
